Soul Project Wine Revolution

Soul Project Wine Revolution | Cayo Scoop! The Ecology of Cayo Culture | Scoop.it

The artisan wines you can find at the Soul Project are amazing, creative, and yes, are a revolution in and of themselves.  Worth a read.

"From its grand opening, Soul Project was planning on selling local wine San Ignacio Town was experiencing a wine-making movement, and local restaurants were not promoting these local artisan wines. Yes, most of the traditional seasonal wines are a bit too sweet and people like to say they give you “bad gomma” or hang over.

But I felt tourists needed to decide for themselves, and we explained, ”this is sweet like port, a desert wine” and they enjoyed it and we became known for selling local wines.  At the same time other new wine makers were making dry wines, and I was now buying from 3 different wine makers.

ARTISAN WINES OR CIDER? Now people from all over the world were coming in to try the local artisan wines and our local artists were also enjoying the vino. I served it in a nice wine glass, chilled, and I kept the price the same as beer. Our goal was always to serve local clientele.

But my suppliers raised there prices on us and it became harder to sell their wine. Some of my wine-making friends and a wine-making book got me started in making our own wine. I started with a Mead or honey wine; it was great but took a bit too long, so my gringo friend John and I started off by making two 5 gallon bottles of wine, one was of cowfoot leaf/anise and the other was a ginger wine. I went on vacation while the wine was set aside fermenting; when I got back I bottled using recycled rum bottles and sold out the first few nights. People loved the fact that we were producing wine in-house from herbs and seasonal fruits; the support was so overwhelming that we never stopped making wine. I tell people it’s more like cider, because it’s made more like hard cider; over time our recipes have become more creative and we only use natural ingredients, champagne yeast and lots of love and inspiration."

Second Cheese Making Class a Success | Cayo Scoop! The Ecology of Cayo Culture | Scoop.it

They had another cheese making workshop at Ian Anderson's Caves Branch, and it was fun and informative for all.  Belize now has some great cheese to choose from.

"In September, 2011, I travelled to Warren, Vermont (pop. 302) and took a two week cheese making course offered by Dr. Larry and Linda Faillace of Three Shepherds Farm.  16 months later, our cheeses are being recognized by International cheese makers and holding our second International Cheese Making Workshop.. and its only getting better from here."

Gourmet Cheese Making In The Jungle

Gourmet Cheese Making In The Jungle | Cayo Scoop! The Ecology of Cayo Culture | Scoop.it

Great article about Ian Anderson's artisan cheese, which can usually be found at Cayo's Saturday market.  It's some of the best cheese you can find around Cayo.  They even have a vacation package where guests learn how to make cheese.  All proceeds go towards the BNYCF.  Great cheese, great idea!

"Currently all cheeses are made with cow’s milk, purchased from a neighbor’s dairy.  This winter, Caves Branch will be importing both milk goats and more sheep from the U.S.A.  Semi-hard cheeses such as Old Brabander, Spressa, Trappist, Parmesan and soft cheeses, such as Ricotta, whipped Quark Feta, Roquefort and triple crème Camembert are offered for sale.  The soft cheeses are often blended with herbs, peppers or garlic.  Marketing began at the local market and over facebook to friends.  Two resorts are already serving Caves Branch cheeses to their guests and the growing trend to ‘serve local’ is increasing demand.  All the ingredients to produce the cheeses are donated by the Andersons and all of the proceeds from the cheese sales are donated to fund the ‘youth at risk’ programs of the Belize National Youth Chess Foundation, which Mrs. Ella Anderson founded and chairs."

Belizean Butterfly Artwork by Baron Neal

Great story about Cayo native and artisan Baron Neal, who makes beautiful art from butterfly wings.  Gerry Badillo interviews him in this video.  Turns out, he came up with the idea while working at the butterfly farm at Chaa Creek.  A true success story.  Congratulations, Mr. Neal!

"Making art from butterfly's that dies of natural causes is not something that would pop up firstly when thinking of Belize.  Baron Neal does not let these beautiful creatures go to waste and proves that creative talent can be used in a very interesting and sustainable way."
